Mother’s Day is Sunday and it’s the perfect time to plan a spectacular brunch for your mom. She does so much for you, as well as her friends and family. A day of pampering that includes a glorious brunch is exactly what she deserves.
The thing I like about brunch besides it typically includes cocktails, is that it easy to prepare ahead of time. My typical go-to brunch menu includes an egg dish, a salad, a sweet, a bread and of course a cocktail. I like to serve everything buffet style which makes it even easier!
To help you out in planning your Mother’s Day brunch menu, I have compiled my favorite recipes. I promise they are easy and can all be prepared a day (or two) ahead of time.
First let’s start with the cocktail. Of course you can serve mimosas and they will be wonderful. However, if you are looking for a twist, you should consider a specialty cocktail like my Spring Forward. It’s a delicious rosemary infused vodka drink that is spring in a cocktail glass. It’s easy to make ahead of time and you can make it by the gallon and I won’t judge you. You and your mom should get your groove on. It’s a celebration!
Next let’s focus on the sweet item. My No-Bake Blueberry Cheesecake is perfect. It’s so beautiful and it looks like you really went all out. The reality is it’s so simple and can also be made the day before. Serve it on a cake plate and you are done. Why do cake plates make everything prettier?
So we have drinks and dessert. You could stop right there and have an awesome brunch. However, you will probably want to serve some real food. I love to include a salad. With the cheesecake and other rich menu items, it really does add a nice way to incorporate some delicious vegetables. One of my favorite go to salads is my Italian Chopped Salad. It can be a meal by itself or makes a wonderful side. Either way it gives your guests options and I swear it’s just as delicious if you make it the day before. I have made a huge batch of this salad and eaten on it for days!
So I like to include a bread item. I could throw bagels in a basket and serve those but I think we can do better for your brunch. My Smoked Salmon Pizza is the perfect thing. It’s my version of salmon and bagels, but with less bread and is way prettier.
The last item I would include in your Mother’s Day brunch buffet is a quiche. Quiche is a great choice because it can be made ahead of time and is easy to serve. It’s a great way to get an egg dish on the menu without making things difficult on the host. My absolute favorite quiche is this Arugula and Bacon Quiche. It’s fabulous. I use turkey bacon so it’s a bit healthier than the pork version. I promise you won’t miss the pork bacon. I actually serve this all the time and never tell anyone it has turkey bacon. Fools them every time!
You can mix and match any of your favorite dishes along with mine and you will have a wonderful brunch that mom will love. If you are lucky enough to have your mom in close proximity to you, take advantage of the day and do something extra special for her. My mom in all the way in Missouri so I will be sending my love remotely but she will be in my thoughts as I sip on my Spring Forward for sure!
