Fries are a classic side dish that can be a huge hit to the diet. Since I’m not one to give up things that I love just because they could potentially make me fat, I had to come up with an alternative. I decided to start baking my fries. I know, I know – they aren’t fried anymore, but they are still carbs and carbs are the enemy right? Well, my approach to everything is give and take. I won’t fry the fries, but I will still eat carbs on occasion. And guess what? I love them. Anyone who tells you they don’t like, need, crave carbs on occasion should not be trusted – they are liars.
As with most of my recipes, I like to take a “rustic” approach. I love to take something simple and elevate it with fresh, simple ingredients. It just gives the common Tuesday night dinner a different feel. You friends and family will be so impressed that you took time to look and think of things a bit differently. Isn’t that what cooking is all about – taking care of our loved ones and ourselves?
When I introduced the idea of baked bistro fries to my husband, he gave me certain look and said “that would be great, but what are our other options”? He was skeptical that I could make a delicious, crisp french fry come out of the oven. Honestly, I was skeptical as well, but for the sake of eating fries with dinner, I was willing to try it.
These baked bistro fries are just as crispy and delicious as the deep fried version. The garlic and rosemary are a wonderful addition, but could be skipped if you were looking to go a bit simpler.
